When the heat is on, there’s a need for fresh, light, and quick dishes to prepare. This cold pasta salad with Bresaola della Valtellina IGP, arugula, Grana Padano, and walnuts is perfect for summer: flavorful, nutritious, and ready in just a few minutes! 😍

Ideal for a lunch outdoors, a light dinner, or to take to the office, it is a balanced and complete recipe, rich in protein and flavor. All enriched by the crunchy note of walnuts and the freshness of the shredded arugula. A versatile and irresistible dish to be enjoyed well chilled! ❄️

🛒 Ingredients for 4 people

  • 320 g of fusilli (or another short pasta)
  • 100 g of Bresaola della Valtellina IGP
  • 1 bunch of fresh arugula
  • 60 g of Grana Padano in flakes
  • 8 walnut halves
  • 2 tablespoons of extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Coarse salt, for cooking the pasta

👩‍🍳 Preparation

  1. Cook the pasta in plenty of salted water, following the cooking times indicated on the package.
  2. Drain al dente and immediately rinse under cold water to stop the cooking. Drain very well.
  3. Meanwhile, slice the Bresaola into strips.
  4. Tear the arugula by hand and coarsely break the walnut halves.
  5. Combine all the ingredients in a bowl: pasta, Bresaola, arugula, Grana, and walnuts.
  6. Season with extra virgin olive oil and a sprinkle of black pepper.
  7. Let rest in the refrigerator for at least 30 minutes before serving.
