๐Ÿ›’ Ingredients for about 3 jars

  • 200 g of acacia petals (only the white ones, well cleaned)
  • 600 g of water
  • 400 g of sugar
  • 1 lemon (juice)
  • 1 packet of pectin for jams
  • 200 g of water (to dissolve the pectin)

๐Ÿ‘ฉโ€๐Ÿณ Preparation

  1. In a large pot, cook the acacia flowers with 600 g of water over low heat for about 20 minutes. If the liquid evaporates too much, add more water.
  2. Strain the cooking liquid with a fine sieve and set aside a couple of tablespoons of cooked petals, to add later to the jelly.
  3. Pour the strained liquid back into the pot and add:
    • the lemon juice
    • the reserved petals
    • the sugar
    • the pectin already dissolved in 200 g of water
  4. Cook everything for another 5-6 minutes, stirring often.
  5. Turn off the heat, let it rest for 2 minutes, then immediately pour into sterilized jars.
  6. Screw the lids airtight and proceed with sterilizing the jars.
  7. Store in a cool, dry, and dark place.
