🌿 Homemade green tagliatelle with spinach or chard – Simple and genuine recipe

🛒 Ingredients (for 4 people)
- 400 g of flour
- 3 eggs
- 200 g of spinach (or Swiss chard) already boiled, wrung out, and finely chopped
👨🍳 Step-by-step preparation
1️⃣ Prepare the vegetables
Use spinach (fresh or frozen) or chard leaves. After boiling, squeeze them very well to remove all the water and chop finely.
2️⃣ Prepare the dough
On a work surface, make a well with the flour, add the eggs and the chopped spinach in the center. Start kneading with a fork, then continue by hand until you obtain a smooth and homogeneous dough.
3️⃣ Rest and roll out the dough
Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature. Then roll out the dough with a rolling pin or a pasta machine until you get a thin sheet.
4️⃣ Cut the tagliatelle
Gently roll up the sheet and cut it into strips about 1 cm wide. Unroll the tagliatelle and sprinkle them with flour to prevent sticking.
5️⃣ Cook and serve
Cook the tagliatelle in plenty of salted water for 2-3 minutes and season to taste with tomato sauce, butter and sage, or a good ragù. Enjoy your meal! 🍽️
