🌰 Tajadin dulz de Villa: homemade pasta with chestnut flour and chamomile
A unique recipe that smells of tradition and creativity! The Tajadin dulz de Villa, originating from the area of Villa di Chiavenna, are a handcrafted first course made with chestnut flour, melting cheese, and an unexpected touch: dried chamomile flowers 🌼. A perfect balance between rustic flavors and delicate floral notes that will win you over at the first taste.
🛒 Ingredients (for 4 people)
For the pasta:
- 200 g of white flour 00
- 100 g of chestnut flour
- Water to taste
- Salt to taste
For the dressing:
- 50 g of butter
- 150 g of semi-fat dairy cheese (in cubes)
- 50 g of grated Parmesan
- 20 g of chopped onion
- Pinch of dried chamomile flowers
👨🍳 Preparation
1. Prepare the pasta
In a bowl, combine the two flours and mix with water and a pinch of salt, until you obtain a homogeneous and workable dough.
Roll it out with a rolling pin to a thickness of about 2 mm, then cut into strips of about 6 x 2 cm.
2. Cook the pasta
Bring plenty of salted water to a boil and cook the tagliatelle for a few minutes, draining them al dente.
3. Finish and complete the dish
Transfer the pasta to a non-stick pan with the melted butter and the cheeses. Melt everything over low heat, stirring gently.
Meanwhile, prepare a light sauté with the onion and add it to the pasta.
Finally, crumble a pinch of dried chamomile flowers on top: they will give the dish a truly surprising floral note! 🌼
Serve immediately, hot.
