In the mountain village of Gerola Alta in the Orobie Valtellinesi Park, stands the Centro del Bitto Storico Ribelle

This place is the most important center for the activities of the Consorzio Salvaguardia Bitto Storico Ribelle, committed to the protection and enhancement of Storico Ribelle, a mountain cheese produced according to traditional methods and recognized as a Slow Food Presidio. ​

🧀 La Casèra: where time refines excellence

Within the Center is the Casèra, a naturally aging cellar that hosts over three thousand wheels of Storico Ribelle. Thanks to a natural ventilation system powered by the Bitto stream, the wheels can mature for periods ranging from 70 days to over 10 years. Each wheel has its own history made of alpine pastures, freshly milked milk, and artisanal craftsmanship. 

🐄 Lo Storico Ribelle: an heroic cheese

Lo Storico Ribelle is produced exclusively during the summer months in the alpine pastures of the Bitto valleys. The milk used comes from traditional breed cows and Orobiche goats, an indigenous breed at risk of extinction. The processing is done manually in "calècc", ancient stone structures, without the addition of selected starters, respecting a strict disciplinary that excludes the use of industrial feed. ​

🛍️ Tastings and purchases

The Centro del Bitto offers the possibility to taste and purchase the Storico Ribelle in various maturities. Guided tours allow you to discover the secrets of production and aging, offering a unique sensory experience. It is also possible to order customized wheels to pick up after years of aging. 

📍 How to get there

The Centro del Bitto is located in Gerola Alta, in the province of Sondrio. It can be reached by car via the SS38 of Stelvio up to Morbegno, from where you continue for about 20 km following the signs for Gerola Alta. The Center is located at Via Nazionale 31.​

Gerola Alta è l'ultimo comune della Valgerola. Situato a 1053 m., oltre a Gerola (Piazza) numerose sono le frazioni che si addentrano nella parte alta della valle: Fenile, Nasoncio, Ravizze, Castello, Laveggiolo, La Foppa, La Roia, La Corna, Cassinelle, per citare le principali. La frazione Pescegallo ospita l'unica stazione sciistica del mandamento con impianti di risalita operanti sia in estate che in inverno. Piccoli agglomerati rurali che presentano al visitatore interessanti spaccati di architettura alpina. Il paesaggio qui diventa dolce ed accogliente, i boschi di faggi e castagni lasciano pian piano il posto alle pinete. La montagna si fa più accogliente e godibile in ogni stagione: con le riposanti passeggiante, con le escursioni al Pizzo Tre Signori, ai suoi laghi o agli alpeggi ancora caricati dove si produce il rinomato formaggio Bitto (a marchio Dop).
