🍷 Braised Sforzato Wine with Vegetables and Spices: Traditional Valtellinese Recipe

A typical second course of Valtellinese tradition, perfect for special occasions or winter dinners. The meat, slowly cooked with herbs and vegetables, becomes very tender and is served with a rich and velvety sauce, made with one of the finest wines of Valtellina 🍷🥩.
📝 Ingredients for 4 people:
- 1 kg of beef for braising
- 100 g of all-purpose flour
- Olive oil to taste
- 1 celery stalk
- 1 carrot
- 1 onion
- 10 juniper berries
- 1 bay leaf
- 3 cloves
- 100 g of tomato paste
- 1 liter of Sforzato di Valtellina DOCG
- Salt and pepper to taste
👨🍳 Preparation:
- Lightly flour the meat and sauté it in a high-edged pot (or in a Lavéc, if available) with a drizzle of oil and the herbs: juniper, bay leaf, cloves.
- Add the diced vegetables (celery, carrot, onion) and the tomato paste, letting it flavor for a few minutes.
- Add the remaining flour, then moisten everything with the Sforzato DOCG wine.
- Let it simmer for about 1 hour, with the lid on, until the meat is tender and the sauce is well-reduced.
- At the end of cooking, remove the meat from the pot and blend the sauce with an immersion blender until smooth. Adjust with salt and pepper.
- Slice the meat into even pieces, place it in a baking dish or on a serving plate, and top with the warm sauce.
