Savory Bread, Zucchini and Cheese Pie 🥒🧀 – Waste-Free Recipe Full of Flavor

This savory pie with stale bread, zucchini, and cheese is a recipe taken from the cookbook Tempo di Ricette di Angela and represents a perfect example of waste-free cooking, where simple ingredients transform into a tasty and complete dish. The Altamura bread, fresh zucchini, eggs, and cheeses come together in a soft inside and crispy outside savory pie, ideal for a light lunch, a vegetarian dinner, or an outdoor picnic 🧺🍅
📝 Ingredients
- Some slices of stale bread (about 6 slices of Altamura bread)
- 2 ripe tomatoes
- 500 g of zucchini
- 5 medium eggs
- 1 dl of fresh cream or milk
- About 80 g of grated grana
- About 80 g of emmenthal or another coarsely grated cheese
- 2 tablespoons of b_read crumbs
- A bunch of chopped aromatic herbs (thyme, sage, marjoram, rosemary…)
- Extra virgin olive oil
- Salt and pepper to taste
👩🍳 Step-by-step preparation
- In a bowl, beat 4 eggs with the cream (or milk), adjusting with salt and pepper.
- Soak the slices of bread in the mixture, then drain them and use them to line a pan of about 22 cm (preferably a springform pan), previously lined with parchment paper.
- Bake at 200°C for 7-8 minutes, then remove from the oven and lower the temperature to 180°C.
- Wash, trim, and grate the zucchini with a large-holed grater.
- Saute them in a pan with a drizzle of oil to remove excess moisture, then let them cool.
- In a bowl, mix the zucchini with the remaining egg, half of the grana, and all the emmenthal, adjusting with salt and pepper.
- Pour the mixture into the pan lined with bread.
- Arrange the slices of tomato on top.
- Prepare a mixture with the chopped herbs, bread crumbs, the remaining grana, salt, and pepper, then sprinkle it over the top.
- Drizzle with some oil and bake at 180°C for 20-25 minutes, until golden.
- Let cool slightly before serving.
💡 Useful tips:
- You can also use wholemeal or cereal bread for a more rustic flavor.
- Great the next day as well, reheated in the oven or enjoyed at room temperature.
