A simple, healthy recipe with an ancient flavor that celebrates one of nature's most humble and precious ingredients: wild nettles. The nettles and parmesan frittata is perfect to enjoy in spring, when the tender green shoots rich in beneficial properties start to appear in the meadows. 💚

🛒 Ingredients for 4 people

  • 200 g of fresh nettle tips
  • 5 eggs
  • ½ onion
  • 2 tablespoons of grated parmesan
  • Salt to taste
  • Butter to taste

👩‍🍳 Preparation

  1. Wash the nettles thoroughly, using gloves to avoid direct contact with the skin. Let them drain.
  2. In a pan, sauté the chopped onion with a knob of butter.
  3. Add the nettles and sauté for a few minutes, until they are soft. Adjust with salt.
  4. In a bowl, whisk the eggs with the grated parmesan and a pinch of salt.
  5. Pour the mixture into the pan with the nettles and cook the frittata on both sides, until it is well golden and firm.
