Buckwheat Apple Fritters ππ₯ | Typical Sweet from Valtellina
Among the most beloved desserts of the Valtellinese tradition, we cannot miss the buckwheat apple fritters. A great classic, enhanced by the use of buckwheat flour, also grown in Valtellina, which gives the dessert a rustic and characteristic flavor πΎ.
The stars of the dish are the Golden apples, sweet, juicy, and easily available all year round. These fritters are crispy on the outside, soft on the inside, and flavored with vanilla: ideal as a warm dessert, autumn snack, or Sunday treat in good company. π
π Ingredients for 4β6 servings
- 3 Golden apples
- 50 g of white flour 00
- 150 g of buckwheat flour
- 1 whole egg
- 1 egg white
- 10 g of vanilla baking powder
- 25 cl of milk
- 1 tablespoon of sugar (plus more for garnishing)
- 1 tablespoon of seed oil
- Peanut oil for frying
- A pinch of salt

- In a bowl, sift the flours with the baking powder, then add the milk, egg, one tablespoon of sugar, oil, and a pinch of salt.
- Mix with a whisk or mixer until you achieve a smooth and homogeneous batter. Let it rest for a few minutes.
- In a separate bowl, whip the egg white with a pinch of salt and gently fold it into the batter.
π Prepare the apples
- Peel the apples, remove the core with an apple corer, and cut them into thick slices about 1 cm.
π₯ Fry the fritters
- Heat plenty of peanut oil in a pan until it reaches about 160Β°C.
- Dip the apple slices in the batter and fry 3β4 at a time for 2β3 minutes, turning them until they are puffed and golden.
- Drain on paper towels and sprinkle with granulated sugar.

Serve the fritters hot for perfect crispiness, but they are delicious even cold, perhaps accompanied by a drizzle of honey or a sprinkle of cinnamon for an even more fragrant note.
