Buckwheat and white chocolate cookies 🍪🌾 | Rustic and delicious cookies

Have you ever tried buckwheat cookies? They are a delicious alternative to classic cookies: rustic but fragrant, with a special touch from white chocolate chips and a delicate scent of cinnamon. Perfect for breakfast, tea time, or as a homemade treat to give as a gift! 🎁☕

Thanks to the fine buckwheat flour, these cookies are crumbly and have an authentic taste, while the addition of white chocolate makes them irresistibly indulgent. An easy and quick recipe, ideal also for those who want to give a different touch to their sweet break.

🛒 Ingredients for about 20 cookies

  • 100 g of fine buckwheat flour
  • 75 g of white flour 00
  • 100 g of cold butter
  • 75 g of sugar
  • 1 egg yolk
  • 2 tablespoons of white chocolate chips
  • 4 g of baking powder
  • 1 pinch of salt
  • ½ teaspoon of ground cinnamon

👩‍🍳 Preparation

  1. In a bowl, mix the cold butter with the sugar until you obtain a creamy mixture.
  2. Add the egg yolk, then incorporate the sifted flours, the baking powder, the cinnamon, the salt, and finally the white chocolate chips.
  3. Knead the dough until you form a compact ball, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  4. After the time has passed, roll out the dough with a rolling pin on a lightly floured surface to a thickness of about 5 mm.
  5. Cut out the cookies with your preferred cookie cutters.
  6. Place them on a baking tray lined with parchment paper.

🔥 Baking

  1. Bake in a preheated fan oven at 175°C for about 18 minutes, until lightly golden.
  2. Let them cool on a wire rack before serving or storing in an airtight jar.
