The Rosümada (or rosumada) is an ancient and nutritious drink typical of Valtellina, made with fresh eggs, sugar, and red wine (or, alternatively, milk) 🥚🍷. It was traditionally served cold, directly from the cellar, to farmers returning from work in the fields. An authentic "natural restorative," rich in proteins and sugars, perfect for those who want to rediscover the simple flavors of traditional cooking 🥄

📝 Ingredients (for 1 person)

  • 1 fresh egg
  • Sugar to taste (about 1-2 tablespoons)
  • Red wine or milk, to taste

👩‍🍳 Step-by-step preparation

1. Whisk the egg white:

  • Separate the yolk from the egg white.
  • Whisk the egg white until stiff peaks with a hand or electric whisk.

2. Combine yolk and sugar:

  • Add the yolk and sugar to the whipped egg white.
  • Beat vigorously until achieving a thick and homogeneous cream, in which the sugar is completely dissolved.

3. Add wine or milk:

  • Slowly pour in the red wine (for the more traditional version) or the milk (for a milder version).
  • Mix well to combine all the ingredients.

4. Serve:

  • Enjoy the Rosümada fresh from the cellar, as per the Valtellinese peasant tradition.
