🍫 Chocolate Sciatt – Sweet recipe with vanilla sauce and chocolate ganache

Have you ever tried the sweet version of sciatt? This delicious reinterpretation of the famous Valtellinese fritters replaces the cheese filling with dark chocolate, for a creamy explosion with the first bite 🍫. Crispy on the outside and melting on the inside, chocolate sciatt are perfect to serve as a creative dessert, especially if accompanied by a velvety vanilla sauce and elegant chocolate ganache.

A delightful dessert that is absolutely worth trying!

📝 Ingredients for about 30 sciatt

For the sciatt:

  • 100 g of 00 flour
  • 100 g of buckwheat flour
  • Light beer to taste 🍺
  • 30 cubes of dark chocolate (about 1 cm)
  • 1 liter of vegetable oil for frying

For the vanilla sauce:

  • 50 g of sugar
  • 6 g of cornstarch
  • 2 egg yolks
  • 2 dl of milk
  • ½ stick of vanilla

For the chocolate ganache:

  • 100 g of fresh cream
  • 200 g of dark chocolate chips

👨‍🍳 Step by step preparation

1. Batter for the sciatt

  • In a bowl, mix the two flours with the beer until you get a thick and smooth batter.
  • Cover and let it rest in the refrigerator for at least 30 minutes.

2. Prepare and fry the sciatt

  • Heat the oil in a deep pan to 170°C.
  • Dip the chocolate cubes one by one into the batter.
  • Collect them with a spoon and fry until golden brown. Drain on paper towels.

3. Prepare the chocolate ganache

  • Bring the fresh cream to a boil, turn off the heat, and add the dark chocolate chips.
  • Stir until you obtain a smooth cream.
  • Let it cool in the freezer for a few minutes, then form balls.
  • You can also use these frozen ganaches as filling for the sciatt instead of the chocolate cubes.

4. Prepare the vanilla sauce

  • Bring the milk to a boil with half a stick of vanilla and half of the sugar.
  • In another bowl, whisk the egg yolks with the cornstarch and remaining sugar.
  • Gradually pour the hot milk into the mixture, stir and return to the heat.
  • Cook until it reaches a boil, then turn off the heat and let it cool.

🍽️ Serving

Arrange the hot sciatt on a dessert plate, accompanied by:

  • vanilla sauce warm or cold
  • a few chocolate ganaches
  • a dusting of powdered sugar or unsweetened cocoa (optional)
