📝 Ingredients

  • Peels of organic oranges, preferably untreated
  • Sugar (equal weight to the peels)
  • Water (equal weight to the sugar)
  • Optional: melted dark chocolate for final decoration

👨‍🍳 Procedure

1. Preparation of the peels

  • Make a cross cut on the orange peel.
  • Carefully detach the peel, removing excess parts.
  • Cut into regular strips.
  • Cover the peels with cold water and soak for 10-12 hours (a whole night).

2. Blanching (optional but recommended)

  • To remove any bitterness: bring a large pot of water to a boil, immerse the peels and cook for 10 minutes, then drain.

3. Candifying the peels

  • Weigh the peels.
  • Prepare a syrup with equal weight of sugar and water.
  • Bring to a boil and add the peels.
  • Cook on low heat for 10 minutes.
  • Turn off the heat and let cool completely in the same pot (do not cover with a lid).

👉 Repeat this process 3 times: each time bring to a boil, cook for 10 minutes, turn off and cool.

4. Drying

  • Drain the peels with a slotted spoon and place them on a rack.
  • Let them drain for 30 minutes, then transfer them to parchment paper.
  • Allow to dry for 6-8 hours at room temperature.

5. Finishing

  • Coat the peels in granulated sugar.
  • For a more indulgent variation, dip them halfway in melted dark chocolate and let cool on parchment paper.

🧊 Storage

The candied peels will last up to 1 month in an airtight jar or food bag, away from moisture and heat sources… But they likely won't last that long 😄!
