🥔 Taroz valtellinesi: the original recipe from the mountain tradition
The Taroz are a typical dish of Valtellinese traditional cuisine, rich, flavorful, and prepared with simple and genuine ingredients, just like it was done in the past.
In our grandparents’ homes, potatoes, green beans, onion, and Casera cheese were never missing. This rustic and delicious recipe was born from this tradition, perfect as a main dish or as a substantial side. 🤤
Made live for the Calendario Valtellinese 2019 together with chef Marco Flematti, they are a guarantee of goodness and simplicity!
🛒 Ingredients for 4 people
- 6 medium potatoes
- 2 handfuls of green beans
- 150 g of cubed pancetta
- 1 large onion
- 50 g of butter (preferably from the Latteria di Chiuro)
- 2 slices of Valtellina Casera young cheese
- Salt to taste
👨🍳 Step-by-step preparation
- Boiling the vegetables
- In a large pot with salted water, boil the green beans and the potatoes cut into cubes until soft.
- Cutting the cheese
- Meanwhile, cut the young Casera cheese into thin cubes and set aside.
- Sauté
- In a pan, melt the butter and sauté the finely sliced onion together with the cubed pancetta until golden.
- Mashing
- When the potatoes and green beans are well cooked, drain them and roughly mash them in a bowl using a fork or a whisk, until you get a rustic mixture.
- Incorporating
- Add the Casera cheese to the mash and stir until it is completely .
- Finishing
- Pour the hot and fragrant sauté of onion and pancetta over the mixture, mix well and serve the taroz steaming!
🔄 Tasty variations
- You can omit the pancetta for a vegetarian version.
- Also great with borlotti beans instead of green beans.
- Add a sprinkle of pepper or a drizzle of EVO oil for an extra touch!
