🛒 Ingredients (for a 22-24 cm cake pan)

  • 300 g of ricotta
  • 200 g of sugar
  • 200 g of 00 flour
  • 50 ml of milk
  • 1 packet of baking powder
  • Orange zest (or vanilla or lemon)
  • 3 eggs

📌 Optional but recommended: chocolate chips or candied orange peels

👩‍🍳 Step-by-step Preparation

  1. Lightly heat the milk, just to warm it up (not boiling).
  2. In a large bowl, mix ricotta and sugar using electric whisks, until you get a smooth cream.
  3. Add the eggs one at a time, mixing well before adding the next one.
  4. Sift flour and baking powder directly into the mixture (very important for keeping the cake light).
  5. Pour in the milk and continue to mix with the whisks until you have a homogeneous batter.
  6. Add the orange zest (or other flavor) and mix. If desired, also add chocolate chips or candied peels.
  7. Pour the batter into a buttered and floured cake pan.
  8. Bake in a preheated static oven at 180°C for 30-35 minutes. Do the toothpick test: the cake will be ready when it feels dry on the surface but slightly moist in the center, thanks to the ricotta.
