Smooth Yogurt Cake with Mixed Berry Compote 🍓 | Simple and Delicious Dessert

🍽️ Ingredients for a 26 cm cake pan
- 2 jars of 150 g of natural yogurt (preferably Latteria di Chiuro)
- 1 jar of mixed berry compote
- 280 g of 00 flour
- 180 g of sugar
- 90 ml of corn seed oil
- 2 eggs
- 1 packet of baking powder
- Powdered sugar to taste for decoration
👩🍳 Step by step procedure
- In a large bowl, combine the yogurt, eggs, and sugar. Mix vigorously with a whisk.
- Gradually add the corn seed oil and continue mixing until you obtain a homogeneous mixture.
- Sift the flour with the baking powder and incorporate it into the mixture with a wooden spoon, mixing until you achieve a creamy batter.
- Line a 26 cm springform pan with parchment paper or grease and flour it.
- Pour the batter into the cake pan and bake in a preheated static oven at 180°C for 35 minutes.
- Once baked, let it cool for 10 minutes before removing it from the mold.
- Once cooled, cut the cake in half horizontally and fill with plenty of mixed berry compote.
- Reassemble the dessert and dust with powdered sugar to taste.

- For an even fresher touch, you can add some fresh mixed berries inside the filling.
- If you love contrasts, try using a raspberry or blueberry compote to enhance the slightly tangy note.
