Thanks to the use of yogurt, this cake is soft, perfectly moist, and butter-free.

🍽️ Ingredients for a 26 cm cake pan

  • 2 jars of 150 g of natural yogurt (preferably Latteria di Chiuro)
  • 1 jar of mixed berry compote
  • 280 g of 00 flour
  • 180 g of sugar
  • 90 ml of corn seed oil
  • 2 eggs
  • 1 packet of baking powder
  • Powdered sugar to taste for decoration

👩‍🍳 Step by step procedure

  1. In a large bowl, combine the yogurt, eggs, and sugar. Mix vigorously with a whisk.
  2. Gradually add the corn seed oil and continue mixing until you obtain a homogeneous mixture.
  3. Sift the flour with the baking powder and incorporate it into the mixture with a wooden spoon, mixing until you achieve a creamy batter.
  4. Line a 26 cm springform pan with parchment paper or grease and flour it.
  5. Pour the batter into the cake pan and bake in a preheated static oven at 180°C for 35 minutes.
  6. Once baked, let it cool for 10 minutes before removing it from the mold.
  7. Once cooled, cut the cake in half horizontally and fill with plenty of mixed berry compote.
  8. Reassemble the dessert and dust with powdered sugar to taste.

  • For an even fresher touch, you can add some fresh mixed berries inside the filling.
  • If you love contrasts, try using a raspberry or blueberry compote to enhance the slightly tangy note.
