🧀 Parmesan Savory Cookies: Perfect Recipe for Appetizers and Buffets
Are you looking for a tasty recipe for an appetizer or a different kind of aperitif? Try these parmesan savory cookies, crumbly and flavorful, ideal to serve plain or filled with cheese spreads or sweet and sour jams 🥂. 📝 Ingredients:
- 300–310 g of flour
- 150 g of soft butter
- 50 g of grated parmesan
- 2 egg yolks + 1 whole egg
- 1 pinch of salt
- ½ teaspoon of baking powder (non-vanilla)
👩🍳 Procedure:
- Beat the soft butter with parmesan and salt using the whisk for a few minutes, until you achieve a soft cream.
- Still using the whisk, add the eggs one at a time, waiting for the first to be well absorbed before adding the next.
- Combine the sifted flour with the baking powder, then transfer the dough to the work surface and briefly knead by hand until you obtain a compact dough.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
- Roll out the dough between two sheets of baking paper and cut out circles with a round cookie cutter or the rim of a liquor glass.
- Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 180°C for about 12 minutes.
- For savory pies, bake the same dough at 180°C for 35-40 minutes.
💡 Filling Idea (optional):
Once cooled, you can fill the cookies by joining them two by two with:
- A ricotta and spreadable cheese cream, flavored with salt and pepper
- Or with sweet and sour jams to pair with cheeses
For an extra touch, roll the edges in hazelnut granules!
