🥔 Potato Bites Stuffed with Bitto with Porcini Sauce

All enriched with porcini mushrooms and cream for an irresistible dish!
📝 Ingredients for 4 people:
For the bites:
- 1 kg of potatoes
- 250 g of flour
- 1 egg
- Young Bitto DOP (for the filling, to taste)
- Salt to taste
- Nutmeg to taste
- Pepper to taste
For the sauce:
- Young Bitto DOP (to taste)
- Fresh cream (to taste)
- Porcini mushrooms
- Chopped parsley (for sautéing the mushrooms)
👩🍳 Preparation:
✅ Dough and bites:
- Boil the potatoes with the skin, then peel and mash them in a bowl. Let them cool completely.
- Arrange the potatoes in a well on a work surface, add the egg, salt, a pinch of nutmeg, and pepper.
- Add the flour and knead vigorously until you obtain a homogeneous and compact dough.
- Form rolls and cut them into pieces of about 2.5 cm.
- Cut the Bitto into cubes.
- Flatten each piece of dough, insert a cube of Bitto in the center, and seal well to form a bite.
- Place the bites on a floured tray.
🍄 Sauce and cooking:
- In a large pan, melt the Bitto with a bit of cream.
- Add the sautéed porcini previously cooked with oil and parsley.
- Boil the bites in salted water. Once they float, drain them.
- Sauté them in the pan with the porcini and Bitto sauce for a couple of minutes.
