🥔 Potato Bites Stuffed with Bitto with Porcini Sauce

Do you crave a rich, flavorful first course that is 100% Valtellinese? Try these delicious potato bites stuffed with Bitto DOP, served with a creamy porcini sauce 🍄🧀. A perfect comfort food for autumn and winter, combining the delicacy of potatoes with the strong flavor of young Bitto, a typical cheese from Valtellina. All enriched with porcini mushrooms and cream for an irresistible dish!

📝 Ingredients for 4 people:

For the bites:

  • 1 kg of potatoes
  • 250 g of flour
  • 1 egg
  • Young Bitto DOP (for the filling, to taste)
  • Salt to taste
  • Nutmeg to taste
  • Pepper to taste

For the sauce:

  • Young Bitto DOP (to taste)
  • Fresh cream (to taste)
  • Porcini mushrooms
  • Chopped parsley (for sautéing the mushrooms)

👩‍🍳 Preparation:

✅ Dough and bites:

  1. Boil the potatoes with the skin, then peel and mash them in a bowl. Let them cool completely.
  2. Arrange the potatoes in a well on a work surface, add the egg, salt, a pinch of nutmeg, and pepper.
  3. Add the flour and knead vigorously until you obtain a homogeneous and compact dough.
  4. Form rolls and cut them into pieces of about 2.5 cm.
  5. Cut the Bitto into cubes.
  6. Flatten each piece of dough, insert a cube of Bitto in the center, and seal well to form a bite.
  7. Place the bites on a floured tray.

🍄 Sauce and cooking:

  1. In a large pan, melt the Bitto with a bit of cream.
  2. Add the sautéed porcini previously cooked with oil and parsley.
  3. Boil the bites in salted water. Once they float, drain them.
  4. Sauté them in the pan with the porcini and Bitto sauce for a couple of minutes.
