Are you looking for a genuine, crunchy, and fragrant snack to serve as an appetizer or between meals? These rosemary crackers are perfect! They are made with just a few ingredients and in a few minutes, and they are baked in the oven at high temperature to achieve their irresistible crunchiness 🔥🌿. You can customize them with herbs to your liking or leave them plain!

📝 Ingredients for about 4 people:

  • 150 g of flour
  • 4 tablespoons of extra virgin olive oil
  • 50–60 ml of warm water
  • Finely chopped fresh rosemary
  • Coarse salt to taste

👩‍🍳 Preparation:

  1. In a bowl, mix the flour with the oil, the chopped rosemary, and the warm water.
  2. Work until you obtain a smooth and soft dough.
  3. Wrap it in plastic wrap and let it rest in the refrigerator for about 30 minutes.

🔪 Shaping and baking:

  1. Divide the dough into two portions.
  2. Roll out each part with a rolling pin into a thin sheet (2–3 mm).
  3. Sprinkle the surface with coarse salt and roll over it again with the rolling pin to make it stick.
  4. With a pastry wheel, cut the sheet into rectangles or shapes of your choice.
  5. Bake at 250°C for about 4 minutes.
⚠️ Warning! They cook quickly and can burn easily: keep an eye on them!

🌿 Variants:

You can replace the rosemary with sage, oregano, thyme or other aromatic herbs, or omit it for a neutral version.
