🧁 Savory muffins with cheese, salami, and vegetables

Introduction
Savory muffins are a delightful variation of classic sweet treats, but with a gooey and flavorful center!
Perfect for appetizers, brunch, picnics, or as a starter, they can be prepared in just a few minutes and can be customized with cheeses, cured meats, and vegetables to taste.
The recipe we propose comes from Tempo di Ricette di Angela, simple and very tested: a soft base enriched with gooey cheese, cubes of salami, and, if you like, fresh vegetables. 😋
📝 Ingredients (for about 8-10 muffins)
- 150 g of 00 flour
- 1 teaspoon of instant yeast for savory pies
- 100 g of grated Parmesan cheese
- About 50 g of cubed cheese (scamorza, toma, provolone, latteria…)
- A large handful of diced salami or cacciatorini (or other cured meats to taste)
- 2 eggs
- 100 g of milk
- 50 g of seed oil
- A generous pinch of salt
- Black pepper ground to taste
- Grated vegetables to taste (e.g. zucchini, carrots, chopped spinach)
👩🍳 Step-by-step preparation
- Preheat the oven to 170°C in static mode.
- In a bowl, mix the dried ingredients: flour, yeast, Parmesan, salt, and pepper.
- In another bowl, beat the eggs with the milk and seed oil.
- Combine the liquid ingredients with the dry ones and mix as little as possible, just to combine.
- Add:
- the cubed cheese
- the salami or cured meats
- any grated vegetables (well squeezed if watery)
- Pour the batter into the muffin cases, filling them ¾ full.
- Bake for 15-20 minutes, until the muffins are golden and puffed up.
