📝 Ingredients (for 4 people)
For the pancakes:
- 160 ml of whole milk
- 130 g of 00 flour
- 20 g of grated Grana
- 20 ml of seed oil
- 4 g of baking powder for savory pies
- 1 medium egg (separated yolk and white)
- 1 pinch of salt
- Butter to taste for greasing the pan
For the filling:
- 100 g of Bresaola della Valtellina IGP
- 20 g of shavings of Grana
- 20 g of arugula
- 1/2 Golden apple (sliced thin)
👩🍳 Step-by-step preparation
- Separate the yolk from the white.
- In a bowl, combine the yolk, milk, seed oil, and a pinch of salt, mixing with a whisk.
- In a separate bowl, sift the flour with the baking powder and gradually add it to the liquid mixture, along with the grated Grana.
- Whip the egg white until stiff peaks form with electric beaters and gently fold it into the batter with a spatula, using an up-and-down motion.
- Heat a non-stick pan, grease it with a bit of butter, pour a ladle of batter, and cook the pancakes (about 10 cm in diameter). Flip them when bubbles appear on the surface and finish cooking.
- Continue until all the batter is used.
🍽️ Stacking the pancakes
- Place the first pancake on a plate.
- Fill with:
- 3 slices of Bresaola della Valtellina IGP
- a few leaves of arugula
- shavings of Grana
- thin slices of Golden apple
- Top with a second pancake and repeat the filling.
- Close with a third pancake and serve immediately, preferably still warm.
💡 Tips
- For an even richer version, you can add a layer of cream cheese between the layers.
- Great also as a single layer, rolled up or folded like a crepe.
