πŸ“ Ingredients (for 4 people)

For the mini buns:

  • 500 g of white flour 00
  • 100 g of butter
  • 16 g of salt
  • 25 g of brown sugar
  • 1 egg
  • 200 g of milk
  • 12 g of brewer's yeast
  • Black sesame to taste for decoration
  • 1 beaten egg for brushing

For the filling:

  • 8 mini milk buns (already baked)
  • 8 slices of Bresaola della Valtellina IGP (magatello cut)
  • 50 g of fresh goat cheese
  • 10 g of fresh cream
  • 3 sprigs of chives
  • 8 leaves of baby salad

  1. In a bowl or stand mixer, combine eggs, milk, yeast, and sugar.
  2. Pour over the other ingredients and knead for 10 minutes until you get a smooth dough.
  3. Shape 15 g balls and place them on a baking sheet lined with parchment paper.
  4. Let rise until doubled in size.
  5. Brush with beaten egg and sprinkle with black sesame.
  6. Bake in a static oven at 180Β°C for about 10 minutes.

  1. In a small bowl, mix the goat cheese with the fresh cream and the finely chopped chives.
  2. Cut the buns in half once cooled.
  3. Spread the goat cheese cream on the bottom half.
  4. Add a leaf of baby salad and a slice of Bresaola della Valtellina IGP.
  5. Close with the other half of the bun and secure with a toothpick.
