- 1 zucchini
- 1 shallot
- Some leaves of fresh basil
- Salt and black pepper to taste
- Extra virgin olive oil
- Cuor di burrata
- 2 slices of Bresaola “La Fassona” about 0.5 cm thick
👨🍳 Step by step preparation
- Prepare the vegetables
- Chop the shallot.
- Cut the zucchini into dice not too small.
- In a pan, heat a drizzle of oil, add the shallot and zucchini, and sauté everything over medium heat for a few minutes.
- Adjust with salt and a pinch of pepper.
- Prepare the bresaola
- Cut the slices of Bresaola “La Fassona” first into strips, then finely chop them.
- Transfer to a bowl and mix with a drizzle of oil and a sprinkle of pepper.
- Assemble the tower
- Use a round pastry cutter to assemble the various layers:
- Base of sautéed zucchini
- Layer of cuor di burrata
- Final layer with bresaola tartare
- Press lightly with the back of a spoon to compact and maintain the shape.
- Carefully remove the cutter.
