📝 Ingredients for 6-8 people
- 500 g of young Valtellina Casera DOP cheese, grated
- 100 g of 00 flour
- 150 g of granulated sugar
- 1 packet of saffron powder
- 3 whole eggs
- Butter to taste for greasing the molds
- (Optional) greased parchment paper disks for the bottom of the molds
👩🍳 Step-by-step Preparation
- Preheat the oven to 170°C (static).
- In a bowl, whisk the eggs with a fork.
- Add the grated Casera cheese, the flour, the sugar, and the saffron.
- Mix the mixture with a wooden spoon until you obtain a homogeneous and creamy dough.
- Carefully grease some aluminum molds (you can also use silicone molds). For perfect unmolding, line the bottom with a greased parchment paper disk.
- Pour the mixture into the molds, filling them to the brim.
- Bake in the oven at 170°C for about 15 minutes, until golden.
- Remove from the oven and invert the molds onto a plate, leaving them intact for 10 minutes.
- Carefully remove the mold and serve the tortini warm.
