📝 Ingredients for 4 people
- 8 slices of white bread (without crust)
- 4 slices of young Valtellina Casera DOP
- 8 thin slices of fresh porcini mushroom (optional)
- 2 eggs beaten
- White flour 00 to taste
- Breadcrumbs to taste
- Milk to taste
- Peanut oil for frying
- Salt to taste
👨🍳 Step by Step Preparation
- Remove the crust from the slices of white bread.
- Cut the Valtellina Casera DOP into regular rectangles.
- Slice the fresh porcini mushrooms thinly, if using.
- Assemble the “carrozza”: on one slice of bread place a slice of Casera and, if desired, some slices of porcini. Close with another slice of bread.
- Dip the sandwiches first in milk, then in flour, then in the beaten eggs, and finally in breadcrumbs, being careful to seal the edges well.
- Fry in plenty of hot peanut oil at 170°C, turning the sandwiches on both sides until golden brown.
- Drain on paper towels and season with salt.
- Serve hot, accompanied by two cherry tomatoes and a stick of Casera DOP for a simple yet effective presentation.

- For a vegetarian version you can omit the mushrooms or substitute them with grilled zucchini.
- Great also cut in half and served as finger food for buffets or aperitifs.
